Semi Raw Spring Rolls with Hummus

DSC_0573DSC_0573This week with our veggie box we have received massive leafs of chard. I wasn’t sure what to do with them to start with , so they sat in the fridge for few days.

Here is what I came up with! Semi Raw Spring Rolls with Hummus . Yum!  Inspired by Asian Cuisine ( spring rolls) and North African and Middle Eastern Cuisine (Hummus). They were absolutley delicious and quick to make. Traditional chicpeas in the cans are not raw so the hummus is also not raw! Search for raw hummus recipes for a total raw experience (made from sprouted chickpeas) or enjoy the semi raw version with traditional hummus.

Recipe:

2 big leaves of chard

3 carrots

1 white raddish

2 red peppers

1/2 courgete

1 beetroot

Homemade Hummus ( 1 can of chickpeas, 2 spoons of tahini, 3 cloves of garlic, 1 spoon of olive oil and juice from 1/2 lemon and water)

Tamari (or other soya sauce)

Mix of seeds: sesam, sunflower, pumpkin

Blened mix of flaxseed, hempseeds, chiaseeds

 

Making:

Cut the leaves into half and then cut into stripes. Cut all the veggies into sticks. Spread the hummus on the leaf and add all the veggie. Roll and dip in the tamari  and the seeds. Enjoy!
